To truly know something, you need to know where it’s from, where it’s at, and where it’s going. This is particularly true for tastes. To appreciate a flavor fully, you must understand its journey. This is why ÔMM travels to farms to smell soil, touch budding leaves, and speak with farmers. We listen to the stories of distillers and the aspirations of roasters. In doing so, our mixologists have the intimacy needed to elevate the ingredients on their path with the support of traditional techniques and advanced technology. Vacuum distillation, centrifugation, infusion, and clarification all become conduits for the ingredients past and the individuals who hold them as memories. Finally, a drink is only as mature as its context, so ÔMM serves our cocktails surrounded by artwork that joins the conversation, adding another layer of insight to the discussions you have with flavor, craft, inspiration, and expression.

A Sense of the Collective, Creative Self

Identity is a swirl of influence, origin, and originality. ÔMM’s cocktails aspire to be wholly unique while never forgetting the memories they share with the world. They begin with dreams of place – tea, chocolate, coffee grown in gardens, groves, fields, and farms that have been home to ancient culture and knowledge. Lemongrass, limes, jackfruit, star anise, mango, pineapple, chilli, and lychee offer folk poems, myths, and legends. These fresh ingredients are composed into a collective voice via Shuzo Nagumo’s mastery of blending methods and recipes spanning tradition and invention.

Shuzo Nagumo - A Master of Translating Senses

Shuzo Nagumo speaks in tongues. He is fluent in heritage cocktail techniques and advanced technologies. He traveled far and wide to pick up the languages of planting, harvesting, preparing, and aging from gardens, fields, kitchens, and laboratories. Legends, histories, trends, and myths fill his vernacular. By listening to painters, musicians, artisans, chefs, and designers, he can communicate in bold and unexpected ways that always contain a calming confidence. More than 20 years of experience as a mixologist in Japan and the UK allow him to place an artful blend of all these stories in your glass.

Food isn’t an accessory to cocktails; it's a companion on their journey. ÔMM listens to the stories ingredients carry with them from the land and sea, giving them a voice alongside our cocktails. Abalone, crab, duck, Wagyu beef, snail, and scallop evolve under the inspiration of local ingredients and experimental vision. Herbs, spices, and seasoning foster the transformations so each refined dish performs a duet with our cocktails. Their rich, salty, fresh, and spicy notes balance the sweet, bitter, earthy elements of the drinks, taking both to higher levels. To drink without eating is to listen to look without seeing.
