Shuzo Nagumo Guest Shift
At the heart of ÔMM’s philosophy lies the influence of Shuzo Nagumo, one of Asia’s most innovative mixologists. From Nobu London to Ginza SIX, his career is a study in exploration. Shuzo introduced laboratory tools - centrifuges, vacuum distillation, milk punch - into the world of cocktails, expanding both method and imagination.
His philosophy sees mixology as both science and emotion. At ÔMM, Shuzo serves as mentor and inspiration. He shapes the creative direction and occasionally returns to Vietnam for guest shifts. In October 2025, he presents an exclusive menu in Saigon, a rare evening where his vision comes alive before local guests.
Through Shuzo, ÔMM connects Saigon to the frontline of global mixology while celebrating Vietnamese cacao, coffee, and regional teas.
