Coffee cocktails breathe Saigon’s rhythm. Jack and the Coffee Beanstalk is a grown-up fable, layered, warm, and nostalgic. Mangue et Café merges the golden brightness of mango with the steady bitterness of coffee, a reminder to pause amidst the city’s rush.
Cacao cocktails carry both earth and spirit. Varier is inspired by visits to Vietnamese cacao farms, where soil and weather leave their quiet mark. Vietnamese Xocoatl evokes ritual, layering spices and intensity, sparking surprise and awakening curiosity.

Shuzo introduced laboratory tools - centrifuges, vacuum distillation, milk punch - into the world of cocktails, expanding both method and imagination.
His philosophy sees mixology as both science and emotion. At ÔMM, Shuzo serves as mentor and inspiration. He shapes the creative direction and occasionally returns to Vietnam for guest shifts. In October 2025, he presents an exclusive menu in Saigon, a rare evening where his vision comes alive before local guests.
Through Shuzo, ÔMM connects Saigon to the frontline of global mixology while celebrating Vietnamese cacao, coffee, and regional teas.
